Homemade dulce de leche

Description

Dulce de leche is a traditional Argentinian preparation made from milk and sugar, slowly cooked until obtaining a creamy consistency and characteristic caramel color.

  1. In a large pot, pour milk and add sugar.
  2. Dissolve baking soda in a tablespoon of water and add to the mixture.
  3. If using, add the vanilla bean split in half.
  4. Bring to medium heat stirring constantly until sugar dissolves.
  5. Once sugar dissolves, reduce heat to low.
  6. Cook for 2-3 hours, stirring every 15-20 minutes.
  7. When it starts to color, stir more frequently.
  8. It's ready when it reaches a creamy consistency and dark caramel color.
  9. Remove vanilla bean and transfer to sterilized jars.
  10. Let cool completely before sealing.
