Argentinian Beef Empanadas

Description
Beef empanadas are an icon of Argentinian cuisine. Made with ground beef, onions, hard-boiled eggs, and olives, wrapped in homemade dough and baked in the oven.
Ingredients (for 12 empanadas)
For the dough:
- 500g all-purpose flour
- 100g butter
- 1 teaspoon salt
- 200ml warm water
For the filling:
- 500g ground beef
- 2 large onions
- 2 hard-boiled eggs
- 12 pitted green olives
- 2 tablespoons sweet paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 100g raisins (optional)
Steps
- For the dough: mix flour with salt, add cubed butter and work until crumbly.
- Add warm water gradually until forming a homogeneous dough. Let rest for 30 minutes.
- For the filling: finely chop onions and sauté in oil until translucent.
- Add ground beef and cook until browned.
- Add paprika, cumin, salt and pepper. Cook for 10 more minutes and let cool.
- Add chopped hard-boiled eggs, olives and raisins if using.
- Roll out dough, cut circles and place a tablespoon of filling in each.
- Close forming the traditional Argentinian crimped edge.
- Brush with beaten egg and bake at 200°C for 20-25 minutes until golden.
